Ingredients:
SEMOLINA : ¾ CUP. (130gms)
CHICKPEA FLOUR : ½ CUP. (50gms)
CURD (whisked) : ½ CUP.
CARROT (grated) : ½ CUP.
CAULIFLOUR (finely chopped) : ½ CUP.
GREEN BELL PEPPER (finely chopped) : ½ CUP.
OIL : 1 Tbsp.
TUMERIC POWDER : ¼ TSP.
RED CHILLI POWDER : ½ Tsp.
CORIANDER POWDER : 1 Tsp.
CURRY LEAVES : HANDFUL
GINGER PASTE : 1 Tsp.
GREEN CHIILI : 2-3
ENO FRUIT SALT : ¾ Tsp.
SALT : To taste
BLACK MUSTRED SEEDS : 1 Tsp.
SEASEME SEEDS : 1 Tsp.
CUMIN SEEDS : ½ tsp.
Method:
In a bowl mix semolina, chickpea flour and curd. Mix it well.
And water and make dense batter.
In batter add turmeric, red chili powder, and coriander powder.
Also add ginger paste, finely chopped green chilies, and mix well.
Now add in all the vegetables, if needed add water and mix everything properly.
Let the batter rest for 10 minutes.
When ready to prepare handvo add eno fruit salt.
Now heat a pan and brush it with oil, add in mustard seeds, cumin seeds, sesame seeds and curry leaves.
Once seeds are roasted on low flame pour handvo batter, and cook it for 10-12 minutes in medium flame.
Serve it hot, with chutney.
