Instant Handvo

Ingredients:

  • SEMOLINA : ¾ CUP. (130gms)

  • CHICKPEA FLOUR : ½ CUP. (50gms)

  • CURD (whisked) : ½ CUP.

  • CARROT (grated) : ½ CUP.

  • CAULIFLOUR (finely chopped) : ½ CUP.

  • GREEN BELL PEPPER (finely chopped) :  ½ CUP.

  • OIL : 1 Tbsp.

  • TUMERIC POWDER : ¼ TSP.

  • RED CHILLI POWDER : ½ Tsp.

  • CORIANDER POWDER : 1 Tsp.

  • CURRY LEAVES : HANDFUL

  • GINGER PASTE :  1 Tsp.

  • GREEN CHIILI : 2-3

  • ENO FRUIT SALT : ¾ Tsp.

  • SALT : To taste

  • BLACK MUSTRED SEEDS : 1 Tsp.

  • SEASEME SEEDS : 1 Tsp.

  • CUMIN SEEDS : ½ tsp.

Method:

  • In a bowl mix semolina, chickpea flour and curd. Mix it well.

  • And water and make dense batter.

  • In batter add turmeric, red chili powder, and coriander powder.

  • Also add ginger paste, finely chopped green chilies, and mix well.

  • Now add in all the vegetables, if needed add water and mix everything properly.

  • Let the batter rest for 10 minutes.

  • When ready to prepare handvo add eno fruit salt.

  • Now heat a pan and brush it with oil, add in mustard seeds, cumin seeds, sesame seeds and curry leaves.

  • Once seeds are roasted on low flame pour handvo batter, and cook it for 10-12 minutes in medium flame.

  • Serve it hot, with chutney.
