Quesadilla

Ingredients:

  • Wheat Flour 30g

  • Paneer 50g
  • ¼ Chopped Bell Pepper

  • ¼ Chopped Onion

  • 1 tsp. Jalapeno

  • ¼ Baked Sweet Potato

  • 2 tbsp. Peas

Method:

  • Tortilla dough

    • In a mixing bowl take wheat flour and salt and mix well.
    • Add in water and knead the dough.
    • Let the dough rest for 30 minutes.
    • Now roll the dough and cook it on the pan until soft.
  • Quesadilla stuffing

    • In a non-stick pan heat 1 tbsp of oil.
    • Saute chopped onion, bell pepper, jalapeno.
    • Add in crumbled paneer and mashed sweet potato and mix well.
    • Season the vegetables with cumin powder, chipotle powder, cilantro, salt, and pepper.
    • Mix well and set it aside.
  • Assemble the Quesadilla

    • Place a tortilla in a non-stick pan and spoon the stuffing on half of the tortilla.
    • Fold the other half of the tortilla.
    • Cook both sides of the tortilla until crispy and golden brown.
    • Cut the quesadilla and serve hot.
