Quesadilla

Ingredients:
Wheat Flour 30g
- Paneer 50g
¼ Chopped Bell Pepper
¼ Chopped Onion
1 tsp. Jalapeno
¼ Baked Sweet Potato
2 tbsp. Peas
Method:
Tortilla dough
- In a mixing bowl take wheat flour and salt and mix well.
- Add in water and knead the dough.
- Let the dough rest for 30 minutes.
- Now roll the dough and cook it on the pan until soft.
Quesadilla stuffing
- In a non-stick pan heat 1 tbsp of oil.
- Saute chopped onion, bell pepper, jalapeno.
- Add in crumbled paneer and mashed sweet potato and mix well.
- Season the vegetables with cumin powder, chipotle powder, cilantro, salt, and pepper.
- Mix well and set it aside.
Assemble the Quesadilla
- Place a tortilla in a non-stick pan and spoon the stuffing on half of the tortilla.
- Fold the other half of the tortilla.
- Cook both sides of the tortilla until crispy and golden brown.
- Cut the quesadilla and serve hot.
